Peaches & Cream
Ingredients
1 can peaches, reserving some of the syrup
100 g full-fat Greek yogurt
Splash of whole milk
Directions
Hand-blend all ingredients until smooth.
Process using the Gelato setting.
Mango Sticky Rice Gelato
Ingredients
- 270 g mango
- 1 egg yolk
- Dash of vanilla bean paste
- 150 g coconut milk
- 250 g cooked sticky rice
- Pinch of sea salt
Directions
- Blend all ingredients together with an immersion blender until smooth.
- Freeze and process using the Gelato setting.
- Add a little extra coconut milk before the re-spin, as needed.
Notes
- The sticky rice texture completely disappears after blending.
- The final texture was thick and creamy without needing any additional thickeners.
- Sesame seeds would have been a good mix-in during the re-spin.
Next Time
- Add a little sugar.
- Cook the sticky rice in coconut milk.
- Increase the amount of mango.
- Add mango purée during the re-spin for a stronger mango flavor.
Overall, this was a fun proof of concept and is definitely worth making again.
